baked chicken pastina.

Llast night i made one my favorite pasta dishes for my dolls,
baked chicken pastina
one of my favorites because it's easy, it's yummy, and it's fast.

here's what you'll need:
1 Box of Pastina (any small pasta of your choice will do, I use bowtie)
2 Tablespoons Olive Oil
2 Cubed Boneless/Skinless Chicken Breasts
1/2 small onion, diced
1 Tablespoon Garlic Paste
2 14.5 Ounce Cans of Diced Tomatoes w/Juice
1 Cup Shredded Mozzarella
A Few Pinches of Parsley (Can use fresh or dried)
1/2 Teaspoon Kosher Salt
1/2 Teaspoon Lemon Pepper
1/2 Bread Crumbs (I use more depending on my mood)
1/2 Grated Parmesan Cheese
Butter

here's what you'll do:
preheat oven to 400 degrees
cook your pasta about 5 minutes (it will be REALLY REALLY al dente but don't worry it will cook more once in the oven)
marinate your cubed chicken with salt, garlic and lemon pepper.
heat olive oil in saute pan over medium heat and add chicken. cook 5 minutes then add onions.
once chicken is cooked all the way through toss with cooked pasta.
add in canned tomatoes, mozzarella, and parsley then toss some more.
butter a baking dish (8x8 should do) and pour pasta mixture into the dish.
combine bread crumbs and parmesan cheese and sprinkle over pasta mixture.
dot the top with bits of butter and bake for 30 minutes or until the top is golden brown.

i hope you enjoy it as much as we do!
xo, ryam
